Every day presents a new culinary challenge for Executive Chef Kerry Sear on the Four Seasons Private Jet. Whether it's orchestrating a 20-course chili-infused dining experience for guests intrigued by Shanghai's rich flavors, or navigating stringent aviation safety regulations, Kerry thrives on these unique opportunities. To him, each Four Seasons Private Jet journey is akin to competing in Top Chef - a thrilling sequence of challenges interspersed with rewarding experiences.

Creating the dynamic menus for the jet requires both meticulous planning and abundant creativity from Kerry. The limitations of an onboard kitchen mean that much of the preparatory work and initial cooking must be done on the ground. Once a guest selects their meal in flight, the dish is completed in a specially equipped steam oven, before being enhanced with fresh touches like fruits and herbs from the previous destination.

Hailing from England, Kerry joined the Four Seasons team in Vancouver in 1986, later moving to Toronto and then Seattle. In Seattle, he served as the Executive Chef and owned a successful downtown restaurant. On the jet, his goal is to echo the iconic Four Seasons hotel experience with innovative meals made from fresh ingredients. The only real difference, he notes, is the occasional need for culinary acrobatics during turbulence.

Kerry also oversees food and beverage arrangements for all private events during the journey, ensuring each meal caters to individual dietary restrictions. He collaborates closely with the Four Seasons' ground-based culinary teams to provide a diverse array of dishes and flavors.

Since the Four Seasons began its around-the-world trips in 2012, Kerry has been a part of every journey except one.
